BuffaloSpree.com's Recipe of the week: Dark Chocolate Chunk and Dried Cherry Oatmeal Cookies with Sea Salt

Makes about 45 cookies



1 cup unsalted butter, room temp

1 cup dark brown sugar, firmly packed

2 large eggs

1 ½ tsp. vanilla

1 ½ cups flour

1 tsp baking soda

½ tsp salt

3 cups old fashioned rolled oats

1 cup dried cherries

1 ½ cups bittersweet chocolate, chunks

Maldon Sea Salt for sprinkling


1.  Preheat oven to 350.  Line 2 baking sheets with parchment paper.

2. With an electric mixer, beat butter and sugar together until light and fluffy.   Add eggs, one at a time.  Mix in vanilla.

3. In a large bowl, combine flour, baking soda and salt.  Add to butter mixture, mixing until just combined.  Stir in oats, cherries and chocolate chunks by hand.

4. Drop tablespoon sized scoops onto pans.  Bake for 10-12 minutes, or until cookies are lightly browned.  Take cookies out of oven and sprinkle the top of each cookie with a pinch of Maldon Sea Salt.  Let cool about 5 minutes and transfer to cooling rack.
