BuffaloSpree.com's Recipe of the week: Hot Cocoa Cookies

Makes about 40 cookies

 

Ingredients

Cookies:

1 stick unsalted butter

12 oz. semi-sweet chocolate chips

1 ½ cups flour

4 Tbsp. cocoa powder

1 ½ tsp baking powder

Pinch salt

½ c brown sugar

¾ c sugar

3 eggs

2 tsp vanilla

20 marshmallows

 

Icing:

2 cups confectioners’ sugar

½ stick unsalted butter, melted

4 Tbsp. cocoa powder

¼ c water

Sprinkles for decoration

 

1. Melt chocolate and butter in a small saucepan, stir till smooth and cool.

2. In a bowl, mix together flour, cocoa powder, baking powder and salt.

3. With electric mixer, beat sugars, eggs and vanilla until combined.

4. Add chocolate mix and beat until just combined.

5. Add flour mix slowly and blend till just combined.

6. Chill dough for 1 hour or up to 1 day ahead.

7. Heat oven to 325.  Line 2 baking sheets with parchment.

8. Roll dough into 1 Tbsp. size balls and place 2” apart on cookie sheets.  Flatten the balls slightly.

9. Bake 10-12 minutes.  In the meantime, cut each marshmallow in half crosswise and when cookies come out of the oven, place a marshmallow in the middle of each cookie.  Return cookie sheet to oven and bake 2 minutes more.

10. Make icing by combining all ingredients together until smooth.

11. When cookies are cooled completely, spoon icing on top of each marshmallow and sprinkle with sprinkles to decorate.
