This is an easy and delicious coffee cake that you can bake in a loaf, a bundt or a 12 portion mini loaf pan...

 

Cake:

1 1/2 c sugar
2/3 c oil
3 eggs
1 1/2 c OJ
1 tsp vanilla
1 Tbsp Orange Liquor
2 Tbsp orange zest
1/3 c poppy seeds
3 c flour
Pinch salt
4 tsp baking powder

 

Glaze:

1/2 c OJ
1/4 c brandy or orange liquor 
Zest of 1 orange
1/2 c sugar 

 

Directions

1) Preheat oven to 350.

2) Grease either ( 2) 8 1/2 x 4 1/2” loaf pans or 1 bundt, or a 12 portion mini loaf pan.

3) In mixer, blend sugar and oil. Beat in eggs, stir in OJ, vanilla, orange liquor, zest and poppy seeds till combined.

4) Add flour, salt and baking powder, stir till smooth.

5) Pour into desired pan type.

6) Bake 50 minutes for loaves and mini  loaves, 60 for bundt.

7) Cool 10 minutes and turn out onto cooling rack.

 

Glaze:

1) In small saucepan, mix all ingredients and stir over low till sugar is dissolved.

2) Drizzle over cake.
