Bourdain’s. Last. Meal. If that doesn’t say “gastrophile,” what does? This understated plate of superbly executed succulence is an ode to all that is right about meat. A delicate disc of foie gras torchon is dressed with a sprinkle of fine salt and a dab of housemade mustard. Panko-crusted bone marrow is fried to a gentle brown and topped with a fresh parsley salad. Pork belly is cooked exquisitely and folded into what might be the best barbecue sauce in WNY. Demure in size but prodigious on the palate, Seabar’s interpretation of Anthony Bourdain’s imagined last meal is both an excellent introduction for a nonfoodie and a must for those already committed to a food-mad life. Order two and match one another bite for a bite.
