Aioli (From Olive Oil, 5-6/04) |

| Ingredients: | 6 cloves garlic, peeled 1 tablespoon cold water The juice of 1 lemon 1/2 teaspoon salt 3 egg yolks 2 cups olive oil |
| Directions: | Combine the garlic, water, lemon juice and salt in the bowl of a food processor and process until smooth. Add the egg yolks and continue to process until the yolks become frothy and lighter in color. With the machine running, pour the olive oil through the feeder tube in a thin steady stream until all of the oil is incorporated. Store the aioli in the refrigerator for up to 3 days. |
