Salsa Pico de Gallo (From a History of Tomatoes, 9/08)

Number of Servings: makes 1 quart
Ingredients: 4-5 ripe tomatoes, seeded and diced
1/2 medium onion, diced
1 tablespoon minced garlic
3 jalapeno, minced
1/4 cup chopped cilantro
3 tablespoons olive oil
1 tablespoon lime juice
1 teaspoon salt
Directions:

Mix all ingredients together, cover with plastic wrap, and refrigerate for half an hour.
