Vegetable Broth (From Soup, Stock, and Broth, 11-12/01)

Ingredients
1 large Spanish onion, peeled and diced
4 ribs celery, peeled and diced
2 parsnips, peeled and diced
1 small rutabaga, peeled and diced
1 small head green cabbage, quartered
12 mushrooms
1 bayleaf
10 whole black peppercorns
2-1/2 quarts cold water
Directions

Combine all of the ingredients in a heavy stockpot. Bring slowly to a boil, skim the surface of any impurities then lower the heat to a simmer. Allow the broth to simmer for approximately 1 hour, then strain through cheesecloth or a fine mesh colander.
