White Bean and Basil Gazpacho (from On Cooking for a Living/Recipes That Won't Heat Up Your Kitchen, 7-8/04) |

| Ingredients: | 2 cups cooked white beans 1/2 cup washed and chopped fresh basil 1 cup chicken broth or water 3/4 cup loosely packed fresh breadcrumbs 1/4 cup virgin olive oil 2 tablespoons white wine vinegar 1 tablespoon minced garlic 1/2 teaspoon salt 1/2 teaspoon black pepper seeded and diced tomatoes for garnish |
| Directions: | Combine all of the ingredients except the tomatoes in the bowl of a food processor, and process until smooth. Transfer the soup to a bowl and allow the flavors to marry for 1 hour before serving. Garnish with the diced tomatoes. Serve chilled or at room temperature. |
