Number of servings: makes 4 cups


  • 4 cups chicken broth
  • 2 ounces ginger, peeled and sliced
  • 2 ounces garlic cloves, peeled and lightly crushed
  • 3 whole dried chilies
  • 1 teaspoon kosher salt


Combine all of the ingredients in a small saucepot. Bring to a boil then lower to a very low simmer. Skim any impurities that may rise to the surface. Simmer for fifteen minutes then strain through fine mesh bouillon strainer.
